Recipe: Pineapple Fried Rice With Shrimp

Serves: 4

Prep time: 10 minutes    Total Time: 25 minutes



1 lb. peeled and deveined shrimp

2 cloves of garlic, grated

1″ piece of ginger peeled and grated

1/4 tsp. black pepper

3 tsp. vegetable oil (can substitute EVO or Canola)

2 Lg. Eggs, beaten

2 C pineapple Chunks

1/2 lb. green beans, cut into 1″ pieces

3 C cooked brown rice

2 Tbsp. less-sodium soy sauce

3 scallions, sliced

1/4 C roasted unsalted cashews, finely chopped for serving

Toss together shrimp, garlic, ginger and pepper.  Heat 1 tsp. oil in skillet over medium high.  Add eggs and cook, stirring until scrambled 1-2 minutes.  Set aside.  Wipe skillet clean and add an additional 1 tsp. oil and increase heat to high.  Add shrimp mixture, stirring occasionally about 3 minutes or until opaque and pink.  Set aside.  Wipe skillet clean and add additional 1 tsp. oil on high heat.  Add pineapple and green beans and cook until crisp and tender, approximately 2 minutes.  Add rice and cook until heated all the way through.  Stir in shrimp and egg mixture and cook to reheat.  Remove and stir in soy sauce and scallions. Top with cashews prior to serving.
